I have prayed and prayed for wisdom on why my health was decreasing and my weight was increasing...and finally, there has been a breakthrough!! The thing is, though, if I had watched a little more carefully, I would have seen that God was giving me the bits I needed all along. Now, I am down ten pounds and feeling better than I have felt in almost two years. Praise God!!


In this video, I share the nuggets that God gave me...one bite at a time...to bring my mind and body back to a healthy rhythm. There are so many pieces that He had shown me before and simply reminded me of them. However, there were things He opened my eyes to that I had just not ever thought of. Take a minute to listen...they might help you in your journey!

SUPER SIMPLE SUPPER...


If you want easy and amazing...DON'T SKIP THIS ONE!!

Put your favorite type of rice or quinoa in the Insta pot and you will have your creamed spinach made by the time it's done. 20 minutes tops and this delicious goodness is ready!


CREAMED SPINACH


1 tbsp minced garlic

1/2 Yellow or sweet onion, chopped

1 cup unsweetened coconut milk

1/2 cup nut or oat milk

3 tbsp nutritional yeast

Salt and Pepper to taste

1-2 tbsp Corn starch

12-16 oz Spinach


  • In a pan, use a small amount of your favorite oil to saute' the garlic and onion.

  • Add coconut milk, nut or oat milk, nutritional yeast and mix well.

  • Mix corn starch separately in 1/4 cup water

  • Add to mixture, stir well to thicken.

  • Fold in spinach until wilted.


Spoon over your rice and love every minute of your dinner!!
